Red Kale Slaw

Red Kale Slaw is a great side for brisket, pulled pork and other heavy dishes. The acidity balances the meat well.

Ingredients

  • 3 carrots
  • 0.5 red cabbage
  • 2 oranges
  • 2 limes
  • 0.5 tsp salt

Instructions

  • Peel and grate the carrots. Grate the red cabbage and mix with the carrots in a bowl.
  • Squeeze the orange juice and the lime juice straight into the salad bowl and stir well. Add a pinch or two of salt.
  • Leave the salad in the fridge for at least 30 minutes and stir every now and then.
