En st\u00f6rre bit k\u00f6tt som oxbringa, fl\u00e4skkarr\u00e9 eller en stek kommer att g\u00e5 igenom plat\u00e5n under tillagning. Det man ser \u00e4r att temperaturen\u00a0som har\u00a0stigit stadigt i ca en timme pl\u00f6tsligt planar ut. Innertemperaturen kan ligga still i 1-3 timmar, trots att grillen har samma temperatur som vid start.<\/p>\n<p>Det h\u00e4r kan stressa b\u00e5de ovana och halvtr\u00e4nade grillm\u00e4stare, och det \u00e4r l\u00e4tt att h\u00f6ja grilltemperaturen f\u00f6r att f\u00e5 en reaktion, varp\u00e5 k\u00f6ttet g\u00e4rna blir torrt. Beh\u00e5ll lugnet med andra ord.<\/p>\n<p>Det som h\u00e4nder n\u00e4r temperaturen avstannar \u00e4r samma sak som n\u00e4r vi m\u00e4nniskor svettas; svetten p\u00e5 hudens yta kyler ned oss. Den h\u00e4r metoden kallas the <em>Texas crutch<\/em>. Crutch syftar p\u00e5 engelska ordet f\u00f6r krycka, dvs man ger k\u00f6ttet &#8221;hj\u00e4lp p\u00e5 traven&#8221;.<\/p>\n<p>Den \u00e4r inte n\u00f6dv\u00e4ndig, men den <em>kan anv\u00e4ndas<\/em> f\u00f6r att snabba upp tiden det tar f\u00f6r k\u00f6ttet att blir klart. Kom ih\u00e5g att ta bort folien och grilla k\u00f6ttet p\u00e5 h\u00f6g direkt v\u00e4rme i n\u00e5gon minut f\u00f6r att f\u00e5 lite b\u00e4ttre och finare <a href=\"https:\/\/hankstruebbq.com\/se\/bark\/\">bark<\/a> p\u00e5 slutet.<\/p>\n<h3>Tv\u00e5 s\u00e4tt att &#8217;wrappa&#8217;<\/h3>\n<p>Som n\u00e4mnts ovan kan man vira in k\u00f6ttet i folie i <em>b\u00f6rjan av plat\u00e5n<\/em>, n\u00e4r k\u00f6ttet har ca 60\u00b0 C innertemperatur. Det man vinner d\u00e5 \u00e4r 1-3 timmar snabbare tillagningstid, samt att k\u00f6ttet \u00e4r maximalt saftigt.<\/p>\n<p>Man kan ocks\u00e5 vira in k\u00f6ttet i folie <em>efter plat\u00e5n<\/em>, n\u00e4r k\u00f6ttet har ca 70\u00b0 C innertemperatur.
