En saltsten \u00e4r en massiv skiva, \u00e5tminstone 2.5 cm tjock, gjord av det rosa Himalaya-saltet. M\u00e5nga butiker s\u00e4ljer dem, och de finns ocks\u00e5 att best\u00e4lla online. S\u00e5 hur anv\u00e4nder man en saltsten, och till vad? L\u00e5t oss genast s\u00e4tta ig\u00e5ng.<\/p>\n<h2>Anv\u00e4ndningsomr\u00e5de<\/h2>\n<p>En saltsten kan anv\u00e4ndas som den \u00e4r, dvs f\u00f6r att servera maten p\u00e5 bordet. Det finns olika h\u00e5llare\/ramar i metall med handtag p\u00e5 som man kan k\u00f6pa till. Vi kommer dock att l\u00e4gga blocket p\u00e5 grillen f\u00f6r att anv\u00e4nda som stekbord. Ta allts\u00e5 god tid p\u00e5 dig att v\u00e4rma upp saltstenen. Man testar v\u00e4rmen genom att h\u00e5lla handen ca 5 cm \u00f6ver blocket, dvs precis som f\u00f6r stekpannan i k\u00f6ket. Man kan ocks\u00e5 st\u00e4nka ett par droppar vatten p\u00e5 stenens ovansida och se hur snabbt det avdunstar. Om du kan m\u00e4ta temperaturen, sikta p\u00e5 200\u00b0 C. Jag l\u00e4gger in stenen p\u00e5 gallret (viktigt, s\u00e5 den &#8217;h\u00e4nger&#8217; i luften s\u00e5 att s\u00e4ga) n\u00e4r <em>ugnen \u00e4r kall<\/em>. Sl\u00e5 p\u00e5 ugnen, s\u00e4tt den p\u00e5 200\u00b0 C. Det tar ca 15 minuter p\u00e5 de flesta moderna ugnar. L\u00e5t den sen ligga i 45 minuter till f\u00f6r att bli genomvarm. Saltstenen \u00e4r &#8217;torr&#8217;, och salt leder v\u00e4rme d\u00e5ligt, s\u00e5 det tar tid. Ta nu ut stenen med grytvantar, akta s\u00e5 du inte br\u00e4nner dig. Man kan tillaga det mesta p\u00e5 en saltsten, b\u00e5de gr\u00f6nsaker, fisk och k\u00f6tt. En skv\u00e4tt olja g\u00f6r susen. Skippa sm\u00f6ret, det br\u00e4nner l\u00e4tt p\u00e5 stenen. S\u00e5 hur g\u00f6r man med <a href=\"https:\/\/hankstruebbq.com\/se\/lar-dig-saltlag\/\">saltning<\/a> av mat n\u00e4r man tillagar p\u00e5 ett saltsten? Jag skippar det, eftersom maten absorberar salt fr\u00e5n blocket under tillagning. Sen provsmakar jag efter\u00e5t och ser om man eventuellt beh\u00f6ver tills\u00e4tta mer. D\u00e4rf\u00f6r \u00e4r k\u00f6ttbitar med ben (t\u00e4nk kotlett) inte optimala, d\u00e5 benen g\u00f6r att k\u00f6ttet lyfts n\u00e5gon millimeter. Oavsett om det \u00e4r fisk, k\u00f6tt eller gr\u00f6nsaker b\u00f6r det vara tunt skuret. Man steker inte en tjock biff p\u00e5 saltsten. M\u00f6jligtvis sista bryningen bara, om man anv\u00e4nt sig av <a href=\"https:\/\/hankstruebbq.com\/se\/konsten-att-bryna\/#reversesear\">reverse sear<\/a>.<\/p>\n<h2>Reng\u00f6ring<\/h2>\n<p>Det viktigaste man ska g\u00f6ra innan reng\u00f6ring \u00e4r att l\u00e5ta saltstenen svalna. Skrubba sen av saltstenens stekyta med svampen. Sk\u00f6lj svampen i hett vatten och upprepa proceduren. Undvik att spola hett vatten direkt p\u00e5 stenen. Det funkar, men man vill inte urholka den f\u00f6r snabbt. L\u00e5t den sen torka i rumstemperatur. Man kan med f\u00f6rdel klappa den torr med hush\u00e5llspapper.<\/p>\n<h2>F\u00f6rvaring<\/h2>\n<p>F\u00f6rvara stenen i rumstemperatur d\u00e4r det \u00e4r bra ventilerat. Detta f\u00f6r att den inte ska dra till sig eller beh\u00e5lla fukt.
