Dels l\u00e5ter man slaktkroppen h\u00e4nga ett par dagar direkt efter slakt, dels m\u00f6ras k\u00f6ttet efter att det styckats i s\u00e5 kallade vakuum-f\u00f6rpackningar som det s\u00e4ljs i p\u00e5 butikshyllorna. M\u00f6rning generellt handlar om f\u00f6r\u00e4dling, dvs att f\u00f6rb\u00e4ttra b\u00e5de smak och konsistens p\u00e5 k\u00f6ttet.<\/p>\n\n\n\n<p>M\u00f6rning sker p\u00e5 tv\u00e5 s\u00e4tt: dels genom enzymerna som bryter ner k\u00f6ttfibrerna och bindv\u00e4v, och dels oxidation som sker d\u00e5 syre kommer i kontakt med k\u00f6ttet.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Typer av m\u00f6rning<\/h2>\n\n\n\n<p>Det finns i princip tre olika s\u00e4tt att m\u00f6ra k\u00f6tt:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">H\u00e4ngm\u00f6rning<\/h3>\n\n\n\n<p>H\u00e4ngm\u00f6rning kallas \u00e4ven torrm\u00f6rning. Det inneb\u00e4r att k\u00f6tt h\u00e4ngs p\u00e5 krokar eller l\u00e4ggs p\u00e5 ett galler i ett kylsk\u00e5p, ofta med ventilationsfl\u00e4ktar. Det h\u00e4r \u00e4r vad jag kallar \u00e4kta m\u00f6rning, d\u00e5 det till\u00e5ter b\u00e5de enzymatisk m\u00f6rning och oxidation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vakuumm\u00f6rning<\/h3>\n\n\n\n<p>N\u00e4r man vakuum\u00f6rar packar man k\u00f6tt i en t\u00e4ttf\u00f6rslutande p\u00e5se. Det \u00e4r ett v\u00e4ldigt vanligt s\u00e4tt att k\u00f6pa k\u00f6tt i butiker, s\u00e5 den h\u00e4r typen av m\u00f6rning har de flesta kommit i kontakt med. P\u00e5 engelska kallas detta &#8217;cryo-vac bags&#8217;. H\u00e4r sker endast enzymatisk m\u00f6rning, och det \u00e4r det mest kostnadseffektiva s\u00e4ttet att m\u00f6ra k\u00f6tt i industriell skala.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00f6rningsp\u00e5se<\/h3>\n\n\n\n<p>H\u00e4r anv\u00e4nds en specialtillverkad m\u00f6rningsp\u00e5se som \u00e4r halvgenomsl\u00e4pplig. P\u00e5sen sl\u00e4pper ut v\u00e4tska, s\u00e5 att k\u00f6ttets fukthalt sjunker. V\u00e4ldigt lite syre kommer in, vilket g\u00f6r att man f\u00e5r den enzymatiska m\u00f6rningen, och en liten del oxidation. F\u00f6rdelen med den h\u00e4r metoden \u00e4r att det \u00e4r enkelt att g\u00f6ra hemma, och man kan m\u00f6ra i sin vanliga kyl. Bra exempel p\u00e5 det \u00e4r en hel kotlettrad, en hel entrecote eller en hel ryggbiff. Man m\u00f6rar inte enskilda biffar, d\u00e5 det blir f\u00f6r mycket svinn n\u00e4r man sen putsar bort det torra ytskiktet.<\/p>\n\n\n\n<p>Innan man m\u00f6rar g\u00f6r man typiskt ingenting. Inget fett eller annat ska putsas bort. Det g\u00f6r inget att det sitter d\u00e4r, man sk\u00e4r \u00e4nd\u00e5 bort det sen, n\u00e4r den torra ytan ska trimmas.<\/p>\n\n\n\n<p>Det \u00e4r viktigt att h\u00e5lla p\u00e5sens \u00f6ppning ren. Med \u00f6ppning menar jag de \u00f6versta 10 centimetrarna. Detta \u00e4r f\u00f6r att inte f\u00e5 smuts i vakuum-f\u00f6rpackaren, och \u00e4ven f\u00f6r att se till att p\u00e5sen sluter t\u00e4tt sen n\u00e4r man svetsar plastskarven. Det enklaste knepet \u00e4r att vika bak 5 cm av p\u00e5sen, och sen vika 5 cm till. Vik allts\u00e5 tv\u00e5 g\u00e5nger.<\/p>\n\n\n\n<p>Tr\u00e4 nu p\u00e5sen \u00f6ver\/p\u00e5 k\u00f6ttet och skaka ner k\u00f6ttbiten s\u00e5 den kommer \u00e4nda ner i botten p\u00e5 p\u00e5sen. Det g\u00f6r inget om p\u00e5sen \u00e4r lite stor. Man skakar ner den f\u00f6r att undvika luftfickor l\u00e4ngst ner. N\u00e4r k\u00f6ttet \u00e4r i p\u00e5sen viker man upp p\u00e5sens \u00f6ppning. P\u00e5 s\u00e5 vis har vi nu en ren p\u00e5se som sluter t\u00e4tt i vakuum-f\u00f6rpackaren.<\/p>\n\n\n\n<p>Placera p\u00e5sen i vakumf\u00f6rpackaren s\u00e5 att p\u00e5sens mynning \u00e4r helt inne i vakuumtr\u00e5get. Sug ut luften manuellt, tills luften \u00e4r helt ute. Hj\u00e4lp till och massera ut luftfickor under tiden maskinen k\u00f6r. F\u00f6rslut sen p\u00e5sen, och g\u00f6r ytterligare en f\u00f6rslutning innan k\u00f6ttet l\u00e4ggs i kylen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Placering i kylen<\/h2>\n\n\n\n<p>K\u00f6ttet m\u00e5ste ligga p\u00e5 en gallerhylla. Har man inte det f\u00e5r man k\u00f6pa ett l\u00f6st galler s\u00e5 att k\u00f6ttbiten kommer upp en liten bit. Detta f\u00f6r att all fukt som diffunderar ut ur p\u00e5sen ska kunna transporteras bort. <\/p>\n\n\n\n<p>L\u00e5t sen k\u00f6ttet ligga n\u00e5nstans mellan 20 och 45 dagar. Tiden \u00e4r v\u00e4ldigt generell, och beror helt p\u00e5 vilken typ av k\u00f6tt det \u00e4r, hur v\u00e4lm\u00f6rad man sj\u00e4lv vill ha den och s\u00e5 vidare. Lukta \u00e4ven p\u00e5 k\u00f6ttet efter att du tagit bort p\u00e5sen. N\u00e4san \u00e4r v\u00e4ldigt bra p\u00e5 att k\u00e4nna igen doften av sk\u00e4md mat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Putsa och skiva<\/h2>\n\n\n\n<p>Jag skivar alltid k\u00f6ttet i tjocka skivor f\u00f6rst. Jag tycker det \u00e4r l\u00e4ttare att putsa bort det torra ytskiktet p\u00e5 de enskilda bitarna. Men det g\u00f6r man som man vill.
