H\u00e4r kommer en genomg\u00e5ng av vad en Parrilla \u00e4r och hur man anv\u00e4nder den.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00d6versikt<\/h2>\n\n\n\n<p>Det finns m\u00e5nga olika s\u00e4tt att tillaga mat \u00f6ver \u00f6ppen eld. Ett vanligt s\u00e4tt att grilla i Sydamerika \u00e4r att anv\u00e4nda sig av en s.k. Parrilla. Det \u00e4r n\u00e5gon form av eldstad d\u00e4r man br\u00e4nner ved till kol som sen skyfflas \u00e5t sidan f\u00f6r att anv\u00e4ndas till att tillaga maten. En parrilla kan vara v\u00e4ldigt enkel, ungef\u00e4r som ett ugnsgaller placerat p\u00e5 tv\u00e5 stenar med kol under, eller stora kommersiellt byggda grillar med en vev\/sv\u00e4nghjul f\u00f6r att h\u00f6ja och s\u00e4nka gallret \u00f6ver gl\u00f6db\u00e4dden. <\/p>\n\n\n\n<p>Att tillaga p\u00e5 detta viset kallas &#8217;a la parrilla&#8217;, man kan ocks\u00e5 tillaga maten &#8217;al asador&#8217;. Det sistn\u00e4mnda syftar ist\u00e4llet p\u00e5 &#8217;asadores&#8217;, de metallkors man sp\u00e4nner upp djurkroppen p\u00e5 f\u00f6r att sen placera \u00f6ver en kolb\u00e4dd. Allt eftersom den brinner och omvandlas till kol skyfflar man de gl\u00f6dande kolen till andra sidan, under gallret, d\u00e4r maten ligger. Veden m\u00e5ste allts\u00e5 f\u00f6rkolna f\u00f6rst.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Dimensioner<\/h3>\n\n\n\n<p>Parrillan \u00e4r 1 meter h\u00f6g, 97 cm bred och 63 cm djup. Grillytan (gallret) \u00e4r 60&#215;65 cm.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Eldstaden (&#8217;brasero&#8217;)<\/h3>\n\n\n\n<p>Om man vill bygga en egen \u00e4r det n\u00e5gra saker som kan vara bra att veta. Det kommer att bli v\u00e4ldigt varmt d\u00e4r man l\u00e4gger veden och eldar, s\u00e5 \u00f6verdimensionerat material \u00e4r att rekommendera. Den vedtr\u00e4-vagga jag byggde best\u00e5r av 20 mm massivt fyrkantsst\u00e5l, det kommer att h\u00e5lla l\u00e4nge. Runda eller fyrkants-r\u00f6r kommer inte att h\u00e5lla l\u00e4nge. ett l\u00e4mpligt avst\u00e5nd mellan &#8217;ribborna&#8217; \u00e4r ca 5-8 cm, inte l\u00e4ngre. Jag konstruerade ett galler av str\u00e4ckmetall, men det g\u00e5r utm\u00e4rkt att ha rundstav ocks\u00e5, dvs ett galler best\u00e5ende av en massa parallella rundstavar, f\u00f6rslagsvis rostfria. Det \u00e4r enklare att reng\u00f6ra. Avst\u00e5nd mellan gl\u00f6db\u00e4dden och gallret d\u00e5? Ja, 15-18 cm, inte mer. Precis som f\u00f6r &#8217;vanlig&#8217; barbecue anv\u00e4nder man inte tr\u00e4slag med k\u00e5da, som t.ex. gran, tall eller l\u00e4rka. Detta f\u00f6r att de naturligt inneh\u00e5ller terpentin, det vill man inte ha i maten. Men m\u00e5nga andra tr\u00e4slag \u00e4r l\u00e4mpliga. N\u00e4r det g\u00e4ller traditionell barbecue \u00e4r ek i olika former v\u00e4ldigt vanligt, jag anv\u00e4nder uteslutande ek i min offset smoker. Det passar dock inte h\u00e4r, d\u00e5 ek g\u00e5r direkt fr\u00e5n brinnande tr\u00e4 till aska. Mellansteget, gl\u00f6dande kol, intr\u00e4ffar aldrig. D\u00e5 f\u00e5r man anv\u00e4nda andra tr\u00e4slag. Mesquite \u00e4r bra, men det har vi inte i Sverige. Jag anv\u00e4nder bj\u00f6rktr\u00e4 eftersom det finns \u00f6verallt. Normalt anv\u00e4nder jag aldrig bj\u00f6rk till amerikansk barbecue d\u00e5 jag inte gillar r\u00f6ksmaken alls, men h\u00e4r varmr\u00f6ker vi inte utan grillar, och d\u00e5 funkar bj\u00f6rk utm\u00e4rkt.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">T\u00e4nd s\u00e5 h\u00e4r<\/h3>\n\n\n\n<p>Placera ett par halva vedklabbar i klykan d\u00e4r veden ska ligga. Placera ett par t\u00e4ndkuber (eller liknande) direkt under veden p\u00e5 teglet. L\u00e4gg p\u00e5 lite sp\u00e4nt (tunna stickor) och se till att elden och vedklabbarna tar eld. Elda p\u00e5 bra och fyll p\u00e5 med vedklabbar allteftersom.
