{"id":6462,"date":"2019-11-01T12:39:28","date_gmt":"2019-11-01T11:39:28","guid":{"rendered":"https:\/\/hankstruebbq.com\/se\/?p=6462"},"modified":"2023-01-10T07:03:08","modified_gmt":"2023-01-10T06:03:08","slug":"caveman-grilling","status":"publish","type":"page","link":"https:\/\/hankstruebbq.com\/se\/caveman-grilling\/","title":{"rendered":"Caveman grilling"},"content":{"rendered":"\n<p>Caveman grilling, eller Caveman style, \u00e4r en grillteknik d\u00e4r man jobbar direkt  med elden och kolb\u00e4dden.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Back to basics<\/h2>\n\n\n\n<p>Att grilla p\u00e5 det h\u00e4r s\u00e4ttet inneb\u00e4r att man tillagar maten direkt p\u00e5 eller i gl\u00f6db\u00e4dden. Det betyder att man slipper reng\u00f6ra sitt grillgaller efter\u00e5t \ud83d\ude42<\/p>\n\n\n\n<p>Namnet har metoden f\u00e5tt eftersom man f\u00f6r l\u00e4ngesedan inte hade n\u00e5got annat \u00e4n en \u00f6ppen eld att jobba med. Den h\u00e4r tekniken anv\u00e4nds ofta i bland annat Sydamerika. Jag gillar konceptet eftersom det \u00e4r &#8217;enkelt&#8217;, det kr\u00e4vs ingen dyr utrustning.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Allt g\u00e5r att tillaga<\/h3>\n\n\n\n<p>B\u00e5de k\u00f6tt, fisk och gr\u00f6nsaker l\u00e4mpar sig v\u00e4l f\u00f6r caveman grilling. Speciellt gr\u00f6nsaker, skulle jag s\u00e4ga. M\u00e5nga lite st\u00f6rre gr\u00f6nsaker och rotfrukter som blomk\u00e5l, k\u00e5lrot, k\u00e5lrabbit, r\u00f6dbetor osv blir fantastiskt goda av att ligga en timme i foliepaket direkt p\u00e5 gl\u00f6den.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Fisk och skaldjur<\/h4>\n\n\n\n<p>Just fisk g\u00e5r ofta snabbt att tillaga, eller s\u00e5 \u00e4r det sv\u00e5rt att f\u00e5 den att h\u00e5lla ihop n\u00e4r man ska flytta runt den i gl\u00f6db\u00e4dden. Jag anv\u00e4nder ofta antingen folie eller sm\u00f6rpapper. Just sm\u00f6rpapper ser trevligt ut presentationsm\u00e4ssigt d\u00e5 det inte g\u00f6r n\u00e5got att papperet \u00e4r lite br\u00e4nt i kanterna samtidigt som fisken \u00e4r helt perfekt tillagad inuti. Jag brukar knyta sm\u00f6rpapper med lite bl\u00f6tlagt steksn\u00f6re innan s\u00e5 det h\u00e5ller ihop under tiden man grillar.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">St\u00f6rre k\u00f6ttstycken<\/h4>\n\n\n\n<p>Har man st\u00f6rre\/tjockare k\u00f6ttbitar beh\u00f6ver de tid f\u00f6r att bli klara. Om man l\u00e4gger dem direkt i gl\u00f6den blir de br\u00e4nda p\u00e5 utsidan och ej klara i mitten. F\u00f6r att f\u00e5 till \u00e4ven dessa f\u00e5r man tillaga dem p\u00e5 indirekt v\u00e4rme ett tag innan man l\u00e4gger ner dem i gl\u00f6den. Indirekt v\u00e4rme betyder oftast att man tillagar dem en bit \u00f6ver gl\u00f6db\u00e4dden. H\u00e4ng upp dem i ett sn\u00f6re f\u00e4st en gren som man skjuter ner i marken med lite vinkel.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Temperatur<\/h3>\n\n\n\n<p>Just temperaturen kan man inte reglera s\u00e5 mycket, utan man f\u00e5r flytta runt maten (i sidled) d\u00e4r det \u00e4r varmare eller svalare. Ett annat alternativ \u00e4r att justera maten i h\u00f6jdled. D\u00e5 f\u00e5r man anv\u00e4nda sig av en tr\u00e4dgren eller annat som man kan sticka ner i marken. Luta grenen snett \u00f6ver elden och h\u00e4ng maten i sn\u00f6ren.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Val av br\u00e4nsle<\/h3>\n\n\n\n<p>Man eldar alltid med n\u00e5gon form av tr\u00e4, antingen vedklabbar eller kol. Det enda jag inte rekommenderar \u00e4r briketter. Anledningen till att briketter \u00e4r ol\u00e4mpliga \u00e4r att de producerar mycket aska, och askan \u00e4r n\u00e4stan lik sand till karakt\u00e4ren. Det betyder i praktiken att askan fastnar p\u00e5 maten, och det ser mindre aptitligt ut. V\u00e4lj ett bra grillkol ist\u00e4llet.<\/p>\n\n\n\n<p>N\u00e4r det g\u00e4ller ved funkar de flesta h\u00e5rda tr\u00e4slag bra. Precis som vid varmr\u00f6kning vill man undvika tr\u00e4slag med k\u00e5da, d\u00e5 de inneh\u00e5ller terpentin naturligt, och det vill man inte ha i maten. Exempel p\u00e5 dessa \u00e4r fura, gran, l\u00e4rka. Vad g\u00e4ller \u00f6vriga tr\u00e4slag funkar det mesta, men ett undantag finns: ek. Jag brukar se till att ha ca 10 cm djup i gl\u00f6db\u00e4dden s\u00e5 att den r\u00e4cker ett tag. Det g\u00e5r utm\u00e4rkt att ha den tjockare \u00e4n s\u00e5. Om man vet med sig att man ska grilla lite l\u00e4ngre f\u00e5r man r\u00e4kna med att fylla p\u00e5 allteftersom.<\/p>\n\n\n\n<p>T\u00e4nd kolb\u00e4dden p\u00e5 flera st\u00e4llen samtidigt, och v\u00e4nta tills du har en fin gl\u00f6d. Nu \u00e4r det dags att placera maten direkt i gl\u00f6den. L\u00e4gg ner k\u00f6tt och gr\u00f6nsaker, f\u00f6rsiktigt, och r\u00e4kna med att v\u00e4nda ofta. En vanlig inv\u00e4ndning \u00e4r att det fastnar massa kol och aska p\u00e5 maten, men s\u00e5 \u00e4r inte fallet.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\"
