Man lagar ju inte mat p\u00e5 spisen eller i ugnen med slumpm\u00e4ssiga temperaturer som varierar +-50\u00b0 C, eller hur? S\u00e5 varf\u00f6r ska man g\u00f6ra det p\u00e5 grillen?<\/p>\n<p>S\u00e5, hur kontrollerar\u00a0man temperaturen, undrar man kanske. N\u00e4r elden v\u00e4l brinner \u00e4r det lite sv\u00e5rt att bromsa den, eller hur? Nja, det finns flera s\u00e4tt att \u00e5stadkomma det. Eld beh\u00f6ver tre faktorer f\u00f6r att existera:<\/p>\n<ul>\n<li>syre\u00a0(luft)<\/li>\n<li>br\u00e4nsle (kol eller briketter)<\/li>\n<li>v\u00e4rme (t\u00e4ndstickor eller t\u00e4ndare f\u00f6rst, sen \u00e4r den sj\u00e4lvf\u00f6rs\u00f6rjande)<\/li>\n<\/ul>\n<h2>Justera luftfl\u00f6de<\/h2>\n<p>Det mest uppenbara \u00e4r att strypa lufttillf\u00f6rseln. Det funkar riktigt bra givet att man har en grill med lock. L\u00e4gg p\u00e5 locket och justera luftfl\u00f6det med botten- och toppventilen. Man reglerar luftfl\u00f6det in med bottenventilen, och utfl\u00f6det med toppventilen. S\u00e5 vilken av dem ska man anv\u00e4nda? Min grundrekommendation \u00e4r att s\u00e4tta bottenventilen till halv\u00f6ppen och reglera elden\u00a0med toppventilen.\u00a0Anledningen \u00e4r att om luft inte kan komma ut, d\u00e5 kommer luft inte in heller. Syre\u00a0<em>trycks<\/em> n\u00e4mligen inte in, det <em>sugs<\/em> in pga det lilla undertryck som uppst\u00e5r d\u00e5 varm luft f\u00f6rsvinner ut i toppventilen. Experimentera och se vad som funkar b\u00e4st f\u00f6r din grill.<\/p>\n<h2>Justera br\u00e4nsle<\/h2>\n<p>H\u00e4r f\u00e5r man b\u00e4st h\u00e4vst\u00e5ngseffekt. Om br\u00e4nslem\u00e4ngden \u00e4r begr\u00e4nsad kan elden bara bli s\u00e5 varm. <em>Det h\u00e4r \u00e4r det som \u00e4r viktigast att f\u00e5 r\u00e4tt<\/em>. Den senare anv\u00e4nds som ett moment i Orm-metoden. Minion-metoden (namngiven efter Jim Minion) betyder helt sonika att man bara t\u00e4nder ett f\u00e5tal kol eller briketter i en skorstenst\u00e4ndare, och n\u00e4r de brinner fullt l\u00e4gger man dem p\u00e5 <em>de \u00e4nnu icke t\u00e4nda\u00a0kolen<\/em> i grillen.\u00a0P\u00e5 s\u00e5 vis brinner endast ett f\u00e5tal kol eller briketter samtidigt. Det betyder l\u00e4gre v\u00e4rme, men ocks\u00e5 att elden varar l\u00e4ngre, d\u00e5 den sprider sig l\u00e5ngsamt fr\u00e5n kol till kol, ist\u00e4llet f\u00f6r att alla brinner samtidigt. Domino-effekten passar bra in som liknelse h\u00e4r.<\/p>\n<h3>Minion-metoden<\/h3>\n<p>Fyll grillen med kol eller briketter som vanligt. L\u00e4gg 4-5 kol eller briketter i en skorstenst\u00e4ndare. H\u00e4r kan man med f\u00f6rdel v\u00e4nda skorstenen upp-och-ned, d\u00e5 man har s\u00e5 f\u00e5 kol. T\u00e4nd dem med tidningspapper under, och l\u00e5t dem b\u00f6rja brinna ordentligt s\u00e5 att kolen har b\u00f6rjat bli askgr\u00e5, eller helgr\u00e5 om man anv\u00e4nder briketter. L\u00e4gg sedan ned dem p\u00e5 de ot\u00e4nda kolen i grillen och st\u00e4ng locket.\u00a0V\u00e4nta 10-20 minuter tills temperaturen har stabiliserat sig.<\/p>\n<h2>Kol eller briketter?<\/h2>\n<p>Det korta svaret \u00e4r: det beror p\u00e5 dina preferenser, s\u00e5v\u00e4l som din grill.Ingen av dem \u00e4r b\u00e4ttre i en absolut j\u00e4mf\u00f6relse. H\u00e4r \u00e4r de tv\u00e5 mest uppenbara skillnaderna:<\/p>\n<ul>\n<li>Kol b\u00f6rjar brinna snabbare, vilket betyder att du kan b\u00f6rja grilla tidigare.<\/li>\n<li>Briketter varar l\u00e4ngre, vilket brukar betyda att man inte beh\u00f6ver fylla p\u00e5.<\/li>\n<\/ul>\n<p>N\u00e4r man grillar &#8221;low n&#8217; slow&#8221; borde briketter vara det sj\u00e4lvklara valet kanske, men inte n\u00f6dv\u00e4ndigtvis. Det beror p\u00e5 vilken grill man har. Om det \u00e4r en klotgrill skulle jag alltid anv\u00e4nda briketter, eftersom den \u00e4r gjort av pl\u00e5t (ingen isolering vilket g\u00f6r\u00a0den \u00e4r k\u00e4nslig f\u00f6r vind och regn), samt att\u00a0den l\u00e4cker in luft (f\u00f6rutom via ventilerna) vilket g\u00f6r den lite sv\u00e5r-reglerad. Om man har en kamado-grill (keramisk, isolerad) som h\u00e5ller temperaturen mycket b\u00e4ttre och kr\u00e4ver mindre br\u00e4nsle skulle jag alltid anv\u00e4nda kol.<\/p>\n<h3>Kan jag blanda?<\/h3>\n<p>Sj\u00e4lvklart. Det \u00e4r vanligt att man anv\u00e4nder kol f\u00f6r att t\u00e4nda briketterna.<\/p>\n<h2 id=\"waterpan\">Vattenpannan<\/h2>\n<p>Det \u00e4r vanligt n\u00e4r man grillar &#8221;low n&#8217; slow&#8221; att placera en vattenpanna i grillen. Du kanske undrar vad vatten har i grillen att g\u00f6ra, men det \u00e4r mycket anv\u00e4ndbart. Vatten \u00e4r bra p\u00e5 att transportera v\u00e4rme. Om vattnet \u00e4r kallt kommer det snabbt att v\u00e4rmas upp n\u00e4r det placeras i grillen. Om den omgivande temperaturen minskar kommer v\u00e4rme att avges fr\u00e5n vattenmassan, vilket ger <em>en mycket effektiv temperaturutj\u00e4mnare<\/em>. Vattenpannan \u00e4r j\u00e4ttebra att anv\u00e4nda som avdelare om man anv\u00e4nder sig av <a title=\"Orm-metoden\" href=\"https:\/\/hankstruebbq.com\/se\/orm-metoden\/\">Orm-metoden<\/a>.<\/p>\n<h3>N\u00e4r ska man <em>inte<\/em> anv\u00e4nda vattenpanna?<\/h3>\n<p>Jag skulle s\u00e4ga: i en kamado-grill. Den skapar en s\u00e5 fuktig luftmilj\u00f6 av sig sj\u00e4lv att det blir \u00f6verfl\u00f6digt. Har man en klotgrill, offsetr\u00f6k eller r\u00f6ksk\u00e5p \u00e4r det dock mycket anv\u00e4ndbart.<\/p>\n<h2>Vad \u00e4r den stora skillnaden?<\/h2>\n<p>Att tillaga p\u00e5 r\u00e4tt temperatur
