Det betyder att det \u00e4r en keramikgrill som eldas med kol. B\u00e5de materialet (lera) och formen (\u00e4gget) spelar stor roll vid tillagning. Just att den har s\u00e5 tjocka v\u00e4ggar j\u00e4mf\u00f6rt med en pl\u00e5tgrill g\u00f6r att den h\u00e5ller j\u00e4mnare v\u00e4rme, och \u00e4ven att den h\u00e5ller v\u00e4rmen v\u00e4ldigt l\u00e4nge, precis som en stenkamin inomhus. Dessutom g\u00f6r formen att man f\u00e5r relativt h\u00f6g luftfuktighet inuti, vilket ger b\u00e4ttre slutresultat.<\/p>\n<h3>H\u00f6g v\u00e4rme-massa<\/h3>\n<p>Att den h\u00e5ller v\u00e4rme l\u00e4nge\u00a0g\u00f6r att man f\u00e5r vara noggrann n\u00e4r man k\u00f6r ig\u00e5ng den att s\u00e5 att temperaturen inte ligger f\u00f6r h\u00f6gt. <em>Det \u00e4r n\u00e4mligen sv\u00e5rt att f\u00e5 ner temperaturen n\u00e4r den v\u00e4l kommit ig\u00e5ng<\/em>. Start- eller t\u00e4ndproceduren \u00e4r allts\u00e5 viktig.<\/p>\n<h3>Energi-effektiv<\/h3>\n<p>En kamado-grill \u00e4r v\u00e4ldigt energi-effektiv, vilket inneb\u00e4r att man kan grilla v\u00e4ldigt l\u00e4nge p\u00e5 en liten m\u00e4ngd kol. Speciellt n\u00e4r man k\u00f6r &#8221;low &#8217;n slow&#8221; \u00e4r det inga problem att grilla 8-10 timmar utan att fylla p\u00e5 kol.<\/p>\n<h3>Reglerbar temperatur<\/h3>\n<p>En annan sak man l\u00e4r sig n\u00e4r man b\u00f6rjar med en kamado-grill \u00e4r att kunna grilla p\u00e5 olika temperaturer, och \u00e4ven h\u00e5lla l\u00e5g\u00a0(och konstant) temperatur under l\u00e5ng tid. Japp, h\u00e4ll p\u00e5 kol, t\u00e4nd och l\u00e5t den g\u00e5 en timme eller tv\u00e5. D\u00e5 l\u00e4r man sig i lugn och ro hur den funkar och hur man justerar den, utan att riskera att maten tar f\u00f6r l\u00e5ng tid eller blir br\u00e4nd. Kol \u00e4r billigt, och det \u00e4r r\u00e4tt sk\u00f6nt att kunna prova sig fram utan stress.<\/p>\n<h2 id=\"whichcoal\">Vilken sorts kol ska jag anv\u00e4nda?<\/h2>\n<p>Det finns i princip fyra alternativ i Sverige idag:<\/p>\n<ul>\n<li>Big Green Egg&#8217;s tr\u00e4kol eller annan h\u00f6gkvalitetskol<\/li>\n<li>&#8221;Vanlig&#8221; tr\u00e4kol<\/li>\n<li>Kol till grekisk ugn (Josper)<\/li>\n<li>Briketter (anv\u00e4nds aldrig i en BGE)<\/li>\n<\/ul>\n<p>Skillnaden mellan de tre f\u00f6rsta \u00e4r att h\u00f6gkvalitestskol \u00e4r gjord p\u00e5 l\u00f6vtr\u00e4d (ek och hickory), den andra \u00e4r typiskt gjord p\u00e5 andra tr\u00e4slag. Den sistn\u00e4mnda kan vara gjord p\u00e5 olika tr\u00e4slag. Skillnaden \u00e4r att kol gjord p\u00e5 l\u00f6vtr\u00e4d har h\u00f6gre densitet, och brinner med l\u00e4gre v\u00e4rme men under l\u00e4ngre tid. Den grillkol som s\u00e4ljs till grekiska restauranger brinner f\u00f6r varmt, s\u00e5 \u00e4n s\u00e5 l\u00e4nge \u00e4r Big Green Egg&#8217;s tr\u00e4kol eller andra kvalitetsm\u00e4rken de enda att rekommendera. <em>Briketter anv\u00e4nder man aldrig<\/em>. Dels f\u00f6r att de ofta inneh\u00e5ller kemikalier, dessutom producerar de v\u00e4ldigt mycket mer aska \u00e4n tr\u00e4kol, och all aska kan s\u00e4tta igen lufth\u00e5len.<\/p>\n<h2 id=\"coalamount\">Hur mycket kol beh\u00f6vs?<\/h2>\n<p>Det beror f\u00f6rst\u00e5s helt p\u00e5 hur mycket och hur l\u00e4nge man vill grilla, och p\u00e5 vilken temperatur. Det man b\u00f6r s\u00e4kerst\u00e4lla\u00a0\u00e4r att man h\u00e4ller i s\u00e5 mycket kol\u00a0att man t\u00e4cker de sm\u00e5 runda lufth\u00e5len i nederdelen av grillen. Undvik alltid de sista smulorna i kols\u00e4cken, de packar sig f\u00f6r t\u00e4tt i grillen och f\u00f6rhindrar bra luftfl\u00f6de.<\/p>\n<h2 id=\"lighting\">Hur t\u00e4nder man enklast?<\/h2>\n<p><strong>Notera<\/strong>: instruktionerna h\u00e4r bygger p\u00e5 att man vill grilla p\u00e5 <strong>indirekt<\/strong> (l\u00e5g) <strong>v\u00e4rme<\/strong>. Det inneb\u00e4r <strong><em>en m\u00e5ltemperatur p\u00e5 110\u00b0 &#8211; 130\u00b0 C<\/em><\/strong>, inte mer. P\u00e5 en s\u00e5n h\u00e4r grill vill man ha &#8221;lagom fart&#8221; i den, f\u00f6r att den ska r\u00e4cka l\u00e4nge. I en vanlig klotgrill \u00e5stadkommer man det med den s.k. <a title=\"Orm-metoden\" href=\"https:\/\/hankstruebbq.com\/se\/orm-metoden\/\">orm-metoden<\/a>. H\u00e4r g\u00f6r vi det genom att t\u00e4nda eld p\u00e5 <em>en del av kolb\u00e4dden<\/em>. Elden sprider sig till resten av kolb\u00e4dden s\u00e5 sm\u00e5ningom.<\/p>\n<p>Se f\u00f6rst till att b\u00e5de botten- och toppventil \u00e4r helt \u00f6ppna. Jag l\u00e4gger ner en t\u00e4ndkub i kolb\u00e4dden, i kanten. Det tar ca 30 minuter att &#8221;f\u00e5 ig\u00e5ng&#8221; grillen. Den h\u00e4r f\u00f6rsta halvtimmen \u00e4r viktig f\u00f6r att snabbt kalibrera in den p\u00e5 r\u00e4tt m\u00e5ltemperatur. Som n\u00e4mnts tidigare \u00e4r det viktigt att den inte blir f\u00f6r varm d\u00e5 det \u00e4r sv\u00e5rt att s\u00e4nka temperaturen n\u00e4r den v\u00e4l kommit ig\u00e5ng. Man \u00e5stadkommer detta genom att endast l\u00e5ta lite kol brinna \u00e5t g\u00e5ngen. En kamado-grill st\u00e5r ofta och &#8221;pyr-gl\u00f6der&#8221;. Allt eftersom enskilda kolbitar brinner upp ant\u00e4nds de n\u00e4rliggande, och p\u00e5 s\u00e5 vis f\u00e5r man elden och v\u00e4rmen att r\u00e4cka l\u00e4nge.<\/p>\n<p>Jag betraktar start-proceduren lite som en trestegsraket. Man vill f\u00e5 ig\u00e5ng en rent brinnande eld, och \u00e4ven v\u00e4rma upp de olika delarna av grillen innan man l\u00e4gger p\u00e5 maten. J\u00e4mf\u00f6rt med en pl\u00e5tgrill \u00e4r de olika grilldelarna rej\u00e4lt mycket tjockare, och det tar helt enkelt n\u00e5gra minuter att v\u00e4rma upp dem. Man m\u00e5ste l\u00e5ta det ske f\u00f6rst. Det som ska v\u00e4rmas upp \u00e4r:<\/p>\n<ol>\n<li>Nederdelen<\/li>\n<li>Locket (med j\u00e4rnventilen)<\/li>\n<li>V\u00e4rmeplattan<\/li>\n<\/ol>\n<p><strong>Allts\u00e5<\/strong>: l\u00e4gg inte p\u00e5 v\u00e4rmeplattan\/deflektorn f\u00f6rr\u00e4n b\u00e5de locket och nederdelen \u00e4r varm. Det blir f\u00f6r m\u00e5nga kalla delar p\u00e5 en g\u00e5ng, vilket riskerar att kv\u00e4va elden.<\/p>\n<p>Efter att man t\u00e4nt kolen v\u00e4ntar man 10 minuter. L\u00e5t locket vara \u00f6ppet, s\u00e5 elden f\u00e5r maximalt med syre. N\u00e4r 10 minuter har g\u00e5tt st\u00e4nger man locket, med toppventilen och bottenventilen helt \u00f6ppen, och l\u00e5ter det bli varmt. Titta noga p\u00e5 f\u00e4rgen p\u00e5 r\u00f6ken, den indikerar om elden brinner rent eller inte. I b\u00f6rjan kommer r\u00f6ken att vara lite vit, d\u00e5 kolbitarna tar eld en efter en. R\u00f6ken ska vara i princip genomskinlig, d\u00e5 har man bra brinn-temperatur. \u00c4r r\u00f6ken vit brinner det inte rent, och f\u00e5r man en bitter sotsmak i maten.<\/p>\n<p>Efter ytterligare 5 minuter kan man l\u00e4gga i v\u00e4rmeplattan och \u00e5terigen st\u00e4nga locket. L\u00e5t \u00e4ven den bli varm, och h\u00e5ll noga koll p\u00e5 elden s\u00e5 den forts\u00e4tter ta sig, och inte sj\u00e4lvslocknar. Se p\u00e5 r\u00f6kf\u00e4rgen. B\u00f6rjar den tjockna, eller om grillen b\u00f6rjar bolma f\u00e5r man lyfta p\u00e5 locket och bl\u00e5sa lite, s\u00e5 den tar sig igen. V\u00e4nta n\u00e5gon minut tills den \u00e4r ig\u00e5ng innan du st\u00e4nger locket igen. <strong>Kom ih\u00e5g<\/strong>: s\u00e5 fort man lyfter p\u00e5 locket \u00e4ndrar (\u00f6kar) man syretillf\u00f6rseln ordentligt, vilket \u00e4r till bra hj\u00e4lp vid start. Det kan\u00a0dock\u00a0p\u00e5verka temperaturen f\u00f6r mycket om man l\u00e5ter locket vara \u00f6ppet\u00a0f\u00f6r l\u00e4nge n\u00e4r grillen varit ig\u00e5ng en timme eller tv\u00e5.<\/p>\n<p>N\u00e4r temperaturen b\u00f6rjar \u00f6verstiga 100\u00b0 C st\u00e4nger man toppventilen s\u00e5 att endast de sm\u00e5 &#8221;\u00f6gonen&#8221; \u00e4r fullt \u00f6ppna. Det resulterar i en dipp i temperaturen. Forts\u00e4tt ha koll p\u00e5 elden och r\u00f6kf\u00e4rgen, s\u00e5 att den h\u00e5ller ig\u00e5ng, men varken kv\u00e4vs eller brinner f\u00f6r intensivt. N\u00e4r man st\u00e4nger locket p\u00e5 detta vis kommer temperaturen att sjunka, det syns tydligt p\u00e5 termometern i locket. Nu kan man st\u00e4nga bottenventilen till lite drygt h\u00e4lften. Man vill inte komma f\u00f6r l\u00e5ngt bort fr\u00e5n maten heller, d\u00e5 man l\u00e4ser av fel temperatur. B\u00e4gge tv\u00e5 har en s\u00e4ndare och mottagare s\u00e5 man kan ha koll p\u00e5 grilltemperaturen \u00e4ven om man inte st\u00e5r vid grillen.
