H\u00e4romdagen fann jag en fr\u00e5n Dalsj\u00f6fors som jag provar att tillaga.<\/p>\n\n\n\n<p>Den bringa jag k\u00f6pte v\u00e4ger 5.3 kilo. Som man ser i receptet \u00e4r det inte den m\u00e4ngd jag tillagar, och h\u00e4r kommer lite bilder och en beskrivning. Det jag noterat de g\u00e5nger jag k\u00f6pt svensk brisket \u00e4r att de inte ser likadana ut som de amerikanska vad g\u00e4ller styckningen. Dels \u00e4r det ofta sv\u00e5rt att se var &#8221;the point&#8221;, dvs den runda och fetare delen \u00f6verg\u00e5r i &#8221;the flat&#8221;, den plattare och magrare delen. Det \u00e4r alltid ett tjockt fettlager som skiljer dem \u00e5t, och h\u00e4r finns ett fettlager, men det \u00e4r ganska tunt. En annan skillnad \u00e4r att man inte f\u00e5r med fettkappan p\u00e5 en svensk brisket. Jag gillar att ha ett par millimeter fettkappa f\u00f6r smakens skull, men den h\u00e4r beh\u00f6vde jag knappt putsa alls.<\/p>\n\n\n\n<p>Det tredje som utm\u00e4rker sig, och det har jag \u00e4ven sett fr\u00e5n andra leverant\u00f6rer, \u00e4r att bringan \u00e4r ihopvikt. N\u00e4r jag v\u00e4l packat upp den och vecklat ut den blir den v\u00e4ldigt stor, men tunn. Eftersom bringa \u00e4r en tuffare bit att tillaga brukar det inte bli bra med f\u00f6r tunn k\u00f6ttbit, s\u00e5 jag putsar alltid bort det som \u00e4r mindre \u00e4n 3 cm i tjocklek. Putset sparar jag och maler till n\u00f6tf\u00e4rs. I det h\u00e4r fallet \u00e4r det en v\u00e4ldigt stor del av bringan som \u00e4r platt och tunn, s\u00e5 jag valde att helt sonika sk\u00e4ra bort den platta delen f\u00f6r att g\u00f6ra f\u00e4rs, och beh\u00e5ller &#8221;the point&#8221; f\u00f6r tillagning. S\u00e5 av 5.3 kilo brisket blir det 2.8 kilo att tillaga, och 2.5 kilo att mala. Lite synd kan jag tycka, men jag har v\u00e4ldigt bra erfarenhet av Dalsj\u00f6fors sen tidigare, s\u00e5 smaken \u00e4r s\u00e4kert alldeles utm\u00e4rkt.
