Ostron lever i saltvatten. De \u00e4ts ofta r\u00e5a, eller med  citron eller n\u00e5n vinaigrett f\u00f6r att tillf\u00f6ra lite syra. Det kommer vi ta  tillvara p\u00e5 h\u00e4r n\u00e4r vi tillagar dem p\u00e5 grillen. Om de \u00e4r f\u00e4rska, dvs levande, st\u00e4nger de sig. De som inte st\u00e4nger sig kastar man. I \u00f6vrigt k\u00e4nner man p\u00e5 vikten i handen. J\u00e4mf\u00f6r med n\u00e5gra andra ostron. V\u00e4ger de f\u00f6r lite h\u00e5ller ostronet inget vatten, och d\u00e5 ska de ocks\u00e5 kastas. Det sista, men mest uppenbara, \u00e4r om de luktar. Ostron luktar inget. Stick in kniven i g\u00e5ngj\u00e4rnet och vrid kniven i sidled (som n\u00e4r man skruvar p\u00e5 en skruvmejsel) f\u00f6r att f\u00e5 locket att sl\u00e4ppa. H\u00e4r kan man sticka in kniven antingen i skalets spetsiga \u00e4nda, eller p\u00e5 den n\u00e5got rakare l\u00e5ngsidan. L\u00e5t det bara lossna, lyft det inte \u00e4n.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">2. N\u00e4r \u00f6verdelen lossat, sk\u00e4r f\u00f6rsiktigt l\u00e4ngs lockets undersida med kniven f\u00f6r att muskeln ska lossa.
