Det \u00e4r ett fl\u00e4sk\u00f6tt med mycket smak och bra marmorering. Pluman grillar man hett och snabbt.<\/p>\n\n\n\n<p>Iberico syftar p\u00e5 den Iberiska halv\u00f6n, dvs Spanien och Portugal. Grisen utm\u00e4rker sig med sina svarta kl\u00f6var. N\u00e4r man k\u00f6per Iberico-k\u00f6tt finns de i tre olika kvalitetsklasser (fr\u00e5n l\u00e4gst till h\u00f6gst): Cebo, Recebo, Bellota. Det har till stor del med kosten att g\u00f6ra. Bellota betyder ekollon p\u00e5 svenska, och grisarna har f\u00f6ljaktligen f\u00e5tt st\u00f6rst andel ekollon i kosten (j\u00e4mf\u00f6rt med Cebo och Recebo). Smaken p\u00e5 Iberico-k\u00f6ttet \u00e4r kraftig och fet, n\u00e5got som uppskattas av m\u00e5nga, inte minst mig. <\/p>\n\n\n\n<p>Det finns tre styckningsdetaljer fr\u00e5n Iberico-grisen som sticker ut. Dessa finns ocks\u00e5 p\u00e5 svenska grisar, men styckas inte p\u00e5 samma s\u00e4tt. Styckning \u00e4r v\u00e4ldigt mycket kulturellt betingat. Det \u00e4r en bit som sitter r\u00e4tt l\u00e5ngt fram p\u00e5 ryggen, vid\/\u00f6ver skulderbladet. Muskeln heter Rhomboideus, och det finns tv\u00e5 p\u00e5 grisen, en p\u00e5 v\u00e4nster och en p\u00e5 h\u00f6ger sida. Den \u00e4r romb-formad som dess latinska namn indikerar. Den \u00e4r r\u00e4tt tunn, ca 2 cm tjock, och tillagas b\u00e4st p\u00e5 direkt v\u00e4rme.\n\n<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-6592\"
