Eftersom den \u00e4r lite tjockare grillar man den p\u00e5 indirekt v\u00e4rme f\u00f6rst.<\/p>\n\n\n\n<p>\nIberico-grisen \u00e4r v\u00e4lk\u00e4nd f\u00f6r dess kvalitet. Det \u00e4r ett fl\u00e4sk\u00f6tt med \nmycket smak och bra marmorering. Iberico syftar p\u00e5 den Iberiska halv\u00f6n, \ndvs Spanien och Portugal. Grisen utm\u00e4rker sig med sina svarta kl\u00f6var. \nN\u00e4r man k\u00f6per Iberico-k\u00f6tt finns de i tre olika kvalitetsklasser (fr\u00e5n \nl\u00e4gst till h\u00f6gst): Cebo, Recebo, Bellota. Det har till stor del med \nkosten att g\u00f6ra. Bellota betyder ekollon p\u00e5 svenska, och grisarna har \nf\u00f6ljaktligen f\u00e5tt st\u00f6rst andel ekollon i kosten (j\u00e4mf\u00f6rt med Cebo och \nRecebo). Smaken p\u00e5 Iberico-k\u00f6ttet \u00e4r kraftig och fet, n\u00e5got som \nuppskattas av m\u00e5nga, inte minst mig.\n\n<\/p>\n\n\n\n<p>Det finns tre styckningsdetaljer fr\u00e5n Iberico-grisen som sticker ut.  Dessa finns ocks\u00e5 p\u00e5 svenska grisar, men styckas inte p\u00e5 samma s\u00e4tt.  Styckning \u00e4r v\u00e4ldigt mycket kulturellt betingat. Eftersom den \u00e4r lite tjockare tillagas den \nb\u00e4st p\u00e5 indirekt v\u00e4rme f\u00f6rst, f\u00f6r att sen brynas helt kort.
