Det s\u00e4gs att slaktaren beh\u00f6ll den h\u00e4r biten sj\u00e4lv. Den best\u00e5r av tv\u00e5 muskler som h\u00e5lls ihop av ett membran i v-form. Njurtappen \u00e4r relativt billig, med mycket smak, s\u00e5 man den \u00e4r v\u00e4ldigt prisv\u00e4rd. Det \u00e4r en fin bit, s\u00e5 man vill inte tillaga den h\u00f6gre \u00e4n medium rare eller medium. H\u00e4r tillagas den p\u00e5 argentinskt vis, med salt.<\/p>\n\n\n\n<p>Tittar man p\u00e5 bilden ovan ser man tydligt den kraftiga senan\/membranet som l\u00f6per l\u00e4ngs hela njurtappen. Man ser \u00e4ven att den \u00e4r lite assymetrisk, dvs de b\u00e5da sidorna \u00e4r olika tjocka. Och sist men inte minst: muskelfibrernas riktning varierar l\u00e4ngs med njurtappen, s\u00e5 man f\u00e5r ha lite koll n\u00e4r man sk\u00e4r upp den.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tillagningss\u00e4tt<\/h3>\n\n\n\n<p>Jag gillar att tillaga njurtappen hel, som i det h\u00e4r receptet. D\u00e5 f\u00e5r man sk\u00e4ra bort senan n\u00e4r k\u00f6ttbiten v\u00e4l \u00e4r p\u00e5 tallriken. Det g\u00e5r precis lika bra att sk\u00e4ra bort senan <em>innan<\/em> tillagning om man f\u00f6redrar det. Tillagningen g\u00e5r n\u00e5gra minuter snabbare i och med att man f\u00e5r tv\u00e5 tunnare bitar k\u00f6tt ist\u00e4llet f\u00f6r en hel.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
