Men inte nu l\u00e4ngre, s\u00e5 h\u00e4r g\u00f6r du!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">S\u00e5 funkar det<\/h2>\n\n\n\n<p>Ostens naturliga syrlighet g\u00f6r att den klumpar sig n\u00e4r man sm\u00e4lter den. Alla som n\u00e5gonsin provat har sett det med egna \u00f6gon. Den d\u00e4r kr\u00e4miga konsistensen som efterstr\u00e4vas infinner sig inte. Och att blanda i n\u00e5n v\u00e4tska som \u00f6l eller vin hj\u00e4lper inte heller. Det kr\u00e4vs att huvudproblemet adresseras, och det kr\u00e4ver att vi minska syran. Det \u00e4r h\u00e4r natriumcitrat kommer in.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vad \u00e4r natriumcitrat?<\/h3>\n\n\n\n<p>Natriumcitrat kallas ocks\u00e5 sursalt eller citronsyresalt. Om man smakar p\u00e5 det m\u00e4rker man direkt s\u00e4ltan (f\u00f6rst\u00e5s), men \u00e4ven syrligheten. Det produceras genom att j\u00e4sa citronsyra.<\/p>\n\n\n\n<p>Natriumcitrat minskar syran i osten, vilket g\u00f6r att proteinerna i osten mer l\u00f6sliga. Det h\u00e4r \u00e4r nyckeln. Genom att tills\u00e4tta natriumcitrat kan osten omvandlas till en mer kr\u00e4mig &#8217;emulsion&#8217; som inte klumpar sig.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Hur man anv\u00e4nder<\/h3>\n\n\n\n<p>Natriumcitrat l\u00f6ser sig enkelt i v\u00e4tska. Saltet l\u00f6ser sig \u00e4nnu b\u00e4ttre om man hettar upp v\u00e4tskan, s\u00e5 det kommer vi att g\u00f6ra. Och n\u00e4r vi anv\u00e4nder en v\u00e4tska kan vi lika g\u00e4rna passa p\u00e5 att tillf\u00f6ra smak, och det ska vi g\u00f6ra: \u00f6l.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Proportioner<\/h3>\n\n\n\n<p>Man beh\u00f6ver v\u00e4ldigt lite natriumcitrat i f\u00f6rh\u00e5llande till m\u00e4ngden ost och v\u00e4tska. Beroende p\u00e5 vilken konsistens man vill ha kan man ta lite mer eller mindre. Generell rekommendation f\u00f6r en bra ost-dip \u00e4r att anv\u00e4nda 1 del ost, 0.5 del v\u00e4tska och 2-3 % natriumcitrat (vikt). \u00d6versatt i vanliga m\u00e5tt blir det t.ex. 100 g ost, 50 gram \u00f6l, och med 2% natriumcitrat blir det (100+50) =&gt; 150 * 0.02 =&gt; 3 g natriumcitrat.<\/p>\n\n\n\n<p>Villl man ha en tunnare s\u00e5s tar man lite mer v\u00e4tska (men samma m\u00e4ngd natriumcitrat). H\u00e4r anv\u00e4nder vi 50%, prova att \u00f6ka till 60-70% f\u00f6r tunnare konsistens.<\/p>\n\n\n\n<p>Anv\u00e4nd en precisionsv\u00e5g vid blandning, det underl\u00e4ttar.<\/p>\n\n\n<div
