Det h\u00e4r \u00e4r ett colombianskt s\u00e4tt att grilla k\u00f6tt direkt i gl\u00f6den.<\/p>\n\n\n\n<p>Vill man imponera p\u00e5 sina g\u00e4ster \u00e4r det h\u00e4r ett riktigt roligt s\u00e4tt att tillaga och servera en st\u00f6rre k\u00f6ttbit. Traditionellt g\u00f6rs det med en hel oxfil\u00e9, men det g\u00e5r utm\u00e4rkt med liknande st\u00f6rre k\u00f6ttbitar ocks\u00e5. H\u00e4r g\u00f6r jag den med fl\u00e4skytterfil\u00e9. Det \u00e4r en bit som l\u00e4mpar sig v\u00e4l f\u00f6r den h\u00e4r typen av grillning.<\/p>\n\n\n\n<p>Man beh\u00f6ver extremt lite i utrustningsv\u00e4g, endast en eld, salt och en gammal k\u00f6kshandduk (som man kan offra). F\u00f6r att kunna tillaga k\u00f6ttet direkt i gl\u00f6den beh\u00f6vs n\u00e5got som skyddar fr\u00e5n den direkta v\u00e4rmen, och det \u00e4r h\u00e4r handduken och det grova havssaltet kommer in i bilden.<\/p>\n\n\n\n<p>Eftersom k\u00f6ttet tillagas p\u00e5 h\u00f6g temperatur, direkt i gl\u00f6den, kommer det tjocka lagret salt att g\u00f6ra att fuktigheten beh\u00e5lls. Handduken i sin tur h\u00e5ller saltet p\u00e5 plats. Under tillagning kommer saltet att torka och bakas ihop till ett h\u00e5rt skal som man sen krossar\/kn\u00e4cker med baksidan av kniven.
