Mango salsa is always a really refreshing side dish, and it is easy to make. There are as many different versions of it as there are chefs, here’s my take on it

Instructions
- Peel and finely chop the shallot. Dice the mango in small cubes. Cut off the two “sides”, then make a grid pattern with a knife. Finally bend it outwards so it (roughly) resembles a porcupine, and cut off all the little cubes.
- Cut the tomatoes in quarters. Put everything in a bowl and stir/mix with a spoon.
- Add the juice from the lime fruits.
- Add coarsely chopped cilantro, half a pot of fresh cilantro is enough, but add more if you like. Stir/mix, then cover with saran wrap and store in the fridge for an hour. Stir once or twice while it is in the fridge.
