Lemon and Caper sauce is a great sauce for most fish. It’s refreshing, easy to put together, and you just need to prep it 30-60 minutes before serving. Here’s how!

Ingredients
- 6 tbsp olive oil
- 3 tbsp capers (drained)
- 1 lemon (zest + half the juice)
- 0.4 cups chopped fresh parsley
- 0.5 tsp salt
- coarse ground black pepper (to taste)
Instructions
- Wash the lemon, and dry it off. Grate the zest from the lemon, and place it in a small bowl with the oil. Squeeze the lemon juice from half the lemon, and add to the bowl with the rest of the ingredients. Mix it using a fork, pressing to squash the capers a little. Let it sit in the fridge for 30-60 minutes before serving. Fresh!
