Mayonnaise marinated herring is a nice twist on the more common mustard marinated herring. It is mild and easy even for beginners.

Ingredients
- 1.6 lbs herring filets
Brine (only used if buying fresh herring)
- 4.2 cups water
- 0.6 cups vinegar essence (24%)
- 3 tbsp salt
Marinade
- 0.8 cups mayonnaise
- 2 tbsp sugar
- 2.5 tbsp mustard (unsweetend)
- 1 tbsp vinegar
- 2 tsp HP Sauce
- 0.2 cups water
- 1 pinch black pepper
- 1 oz frozen dill
Instructions
- There are two ways of preparing herring, depending on how you buy them.
- If you buy herring in tin cans, the first thing you must do is de-brine them as they are way too salty. Place them in a large pot filled with plenty of cold water for two hours. Then get rid of the water.
- If you buy fresh herring, on the other hand, place them in a brine in the fridge overnight, see ingredients above.
- Remove the herring from the water, and let the water drip off. Cut the herring filéts in bite sizes. Mix the herring with all ingredients in a glass jar. Keep it in the fridge.
