Blueberry sauce

Blueberry sauce might not be the first thing you think of for your next dinner, but it is a great sauce with game meat. Try it, I’m sure you’ll like it! Fresh blueberries are preferred, but if you can’t find them, frozen unsweetened blueberries work just fine also.

Ingredients

  • 2 banana shallots (or twice as many regular)
  • 0.4 cups red wine
  • 9 oz blueberries (save some for serving)
  • 1 cup water
  • 3 tbsp beef stock (liquid)
  • 2 tbsp corn starch (for thickening)
  • 2 tbsp vegetable oil

Instructions

  • Chop the shallots and fry them with the blueberries in the vegetable oil in a pan.
  • Add the wine, water and beef stock, and let it simmer for 15 minutes.
  • Pour the sauce through a sieve, use a large spoon to press all the liquid through the sieve. Pour the sauce back into the pan, heat it up and add the corn starch.
  • Bring it to boil, then remove from the stove. Add salt and pepper to taste. When serving, sprinkle a few blueberries on top of the sauce.
