Creamed Corn is a barbecue staple, and for a good reason. Here’s how to make it.

10 oz corn
1 cup double cream
0.5 tsp chipotle chili
0.5 tsp salt
2 oz grated parmesan cheese
0.3 oz butter
1 tbsp corn starch (for thickening)
300 grams corn
2.5 dl double cream
0.5 tsp chipotle chili
0.5 tsp salt
50 grams parmesan cheese
10 grams butter
1 tbsp corn starch (for thickening)

Instructions

Melt the butter in a pan. Fry the corn for 3-4 minutes on medium/high heat. For best flavor the corn should be browned. Now add the cream, salt and chipotle and let it simmer gently for 8-10 minutes. Add the corn starch and bring it to a boil real quick. Remove from the stove and add the cheese. Make sure you use a good quality cheese full of flavor. Stir a few times and let it cool off.
