Pickled red onion is a great side dish that goes well with many dishes, especially during fall season. It is easy to make and you can add a bit of chili if you like. The brine is a classic 1-2-3 brine.

Ingredients

  • 0.4 cups vinegar, 12%
  • 0.8 cups sugar
  • 1.2 cups water
  • 3 large red onions
  • 0.25 tsp salt
  • 10 allspice corns

Instructions

  • Mix vinegar, sugar and water and the spices in a large pan. Bring it to a boil, and remove from the stove. This is done to dissolve the sugar. Stir a few times
  • Peel the onions, but leave them whole. Slice them up in thin slices, preferably using a mandolin. Add the onion to the warm brine, and let it all cool off. Store it all in a glass jar in the fridge.
