Pico de gallo

Pico de gallo is a Mexican tomato salsa. It is really fresh, made in an instant, and it works really well with grilled food. I use shallots here for their mild flavor, but feel free to use red or yellow onion instead.

Ingredients

  • 4 medium sized tomatoes
  • 2 shallots
  • 1 green chili
  • 1 bunch fresh cilantro
  • 2 limes
  • flaked sea salt

Instructions

  • Chop the tomatoes and shallots finely. Remove the seeds from the chili, chop it finely and add to the mix.
  • Rinse, chop and add the cilantro. Squeeze the juice out of the lime(s), and add some flaked sea salt
