Spinach soup is a real gem for long dark days, and healthy too. It doesn’t take long to make, which is good when you run out of ideas for dinner.

Ingredients
- 2.2 lbs chopped spinach (frozen)
- 1 yellow onion
- 4 tbsp vegetable oil (for frying)
- 2 chicken bouillon cubes
- 4.2 cups water
- 2.1 cups cooking cream
- 2 tsp salt
- 1 tsp white pepper
- 1 tsp ground nutmeg
Instructions
- Chop the onion finely. Fry it in oil gently for a few minutes, in a large pan.
- Add the spinach, water and bouillon cubes, bring it to boil, and let it simmer for 5 minutes. This is gonna take a little while since the spinach is frozen.
- Now add the cooking cream and spices, and let it simmer for another 5 minutes.
- Add more salt or pepper if you like. Serve with hardboiled eggs, cut in half.
