Salmon burger

When in the mood for fish burgers, salmon is your friend. This one goes down well with kids also.

Salmon burger is one of the best ways to eat fish. Young people like it, old people like it. What’s not to like? It’s a fresh new take on the classic hamburger, and it doesn’t take long to make.

Serves: 6

Ingredients

ImperialMetric

28 oz salmon
1 egg
4 tbsp greek yoghurt
2 tbsp breadcrumbs
1 tbsp lemon juice
1.5 tsp salt
1 tsp coarsely ground black pepper

Hamburger buns
Topping and sides

800 g salmon
1 egg
4 tbsp greek yoghurt
2 tbsp breadcrumbs
1 tbsp lemon juice
1.5 tsp salt
1 tsp coarsely ground black pepper

Hamburger buns
Topping and sides

Instructions

Place the salmon in a large pan with water, and let it boil for 3-4 minutes. Get rid of the water, and fill the pan with ice cold water and leave it for a few minutes, to cool off the salmon. Get rid of the water and mash the salmon with a fork. Add the rest of the ingredients and mix well. Shape 6-8 burgers with your hands, and place them on a cutting board. Fry them in a frying pan (preferrably non-stick) on high heat for 2-3 minutes per side. Serve on a hamburger bread with mayonnaise, thinly sliced red onion, avocado and some lettuce.
