Pico de gallo is a Mexican tomato salsa. It is really fresh, made in an instant, and it works really well with grilled food. I use shallots here for their mild flavor, but feel free to use red or yellow onion instead.

Ingredients
- 4 medium sized tomatoes
- 2 shallots
- 1 green chili
- 1 bunch fresh cilantro
- 2 limes
- flaked sea salt
Instructions
- Chop the tomatoes and shallots finely. Remove the seeds from the chili, chop it finely and add to the mix.
- Rinse, chop and add the cilantro. Squeeze the juice out of the lime(s), and add some flaked sea salt
