Turkey is really good grilled. There’s a trick to getting it juicy and savory every time; inject butter. It really improves the turkey, which sometimes can come across as a bit dry.
Here’s grilled chicken in with a twist; we cover it with a chocolate and chili glaze, and inject it with lemon syrup, for a slightly different flavor. The chocolate should be dark, with lot’s of cacao. I use one with 70%. I chose the ancho chili for its smokey flavor, with hints of tobacco. It is a good match for the chocolate.
The chicken is prepared with lemon juice and cinnamon for great flavor. It is smoked using apple wood on indirect heat. The combination of apple wood and chicken is fantastic, and the lemon/cinnamon combo adds that extra twist. Here’s how you do it.
