Smoked lemon and cinnamon chicken

The chicken is prepared with lemon juice and cinnamon for great flavor. It is smoked using apple wood on indirect heat. The combination of apple wood and chicken is fantastic, and the lemon/cinnamon combo adds that extra twist. Here’s how you do it.

Ingredients

  • 1 chicken
  • 1 lemon (the juice)
  • 1 tbsp brown sugar
  • 1 tbsp hot water
  • 2 pinch cinnamon

Instructions

  • Rinse the chicken with cold water, and pat it dry with a paper towel, both inside and out
  • Squeeze the juice from one lemon. Mix the hot water with the sugar, and stir until the sugar has dissolved completely. Mix it with the lemon juice.
  • Brush the whole chicken with half the lemon syrup. Inject the other half into the chicken breast and thighs using a marinade injector. Now dust the cinnamon evenly all over the chicken.

  • Fire up your grill, and get it dialled in to 110-120° C/ 225-240° F. Place 3-4 chunks of apple wood on the coals, and place the chicken on the grate. I use a stand. Close the lid and let it smoke until the internal temperature hits 70° C/ 158° F.
