Sweet potato cognac mash

The mash is good in itself, but add some cognac and it takes it to the next level.

I’ve always been a fan of sweet potatoes, so making a sweet potato mash makes perfect sense. In this version I have added some cognac for that extra touch. It really adds some class to the dish.

Serves: 4


3 sweet potatoes
5 oz butter
0.6 cups cooking cream
2 tbsp cognac
1 tsp salt
3 sweet potatoes
150 g butter
1.5 dl cooking cream
2 tbsp cognac
1 tsp salt


Peel the potatoes and chop them in large chunks. Boil them in water until soft. Get rid of the water, and mash the potatoes. Add butter, cooking cream and cognac, and stir over low heat. Add salt and pepper to taste.
