Tiger shrimp

You buy tiger shrimp frozen from your local grocery store. They are available both raw as well as cooked. Buy the raw ones, they are easily identifiable by their gray color. Here we serve them with a nice lemon and oil mix that go great together with avocado.

Ingredients

  • 10 tiger shrimp
  • 1 garlic clove
  • 0.5 lemon (juice + zest)
  • 1 ripe avocado

Instructions

  • Mix the oil with lemon juice, zest and the crushed garlic clove in a small bowl. Let it rest for 20 minutes so the flavors mix well. Stir once in a while with a spoon.

  • Heat up a frying pan (cast iron preferably) so it’s hot. Now add the shrimp and fry them in the dry pan for 1 minute.

  • Turn off the heat completely and flip the shrimp over, and fry them for 1 more minute.

  • Add the oil/lemon mix and stir real quick, then serve it with the avocado. Make sure you spoon over any left over oil/lemon mix from the frying pan.

  1. You must try shrimp on the grill over very very hot coals. 2-3 min per side. It helps a lot to use skewers. Works well with dry pack scallops also.
