White wine sauce

This is a classic white wine sauce with lots of flavor.

Ingredients

  • 0.8 cups water
  • 0.6 cups white wine
  • 0.8 cups cooking cream
  • 1 poultry bouillon cube
  • 1 oz butter
  • 2 banana shallots or twice as many regular shallots
  • 0.5 tsp salt
  • 1 pinch ground white pepper
  • 2 tbsp corn starch (for thickening)

Instructions

  • Finely chop the onions and fry them in butter in a sauce pan without browning them.
  • Add the wine and let it boil gently until the fluid has been reduced to half.
  • Now add the water, bouillon cube and cream, and reduce it again with a third.
  • Pour the sauce into a blender to blend it smooth. Pour it back into the pan, add the corn starch and bring it to a boil. Add salt and pepper to taste.
