Sweet potato cognac mash

I’ve always been a fan of sweet potatoes, so making a sweet potato mash makes perfect sense. In this version I have added some cognac for that extra touch. It really adds some class to the dish.

Ingredients

  • 3 sweet potatoes
  • 5 oz butter
  • 0.6 cups cooking cream
  • 2 tbsp cognac
  • 1 tsp salt

Instructions

  • Peel the potatoes and chop them in large chunks. Boil them in water until soft.
  • Get rid of the water, and mash the potatoes. Add butter, cooking cream and cognac, and stir over low heat. Add salt and pepper to taste.
