Henrik’s Original Pork Rub

Hank’s Original Pork Rub

Hank’s Original Pork Rub is my own dry rub specifically composed for pork butts, ribs et.c. It is a classic rub, not too hot. If you prefer a hotter rub, add cayenne pepper or ground ancho chile pepper, whichever you prefer. This is a small batch, so it is enough for a large rack of ribs. If you want to, you can double or triple the recipe and store it in the fridge.

Smoked aubergine mousse

Smoked aubergine mousse

Smoked aubergine mousse is best served with a sweet yoghurt dip and some bread. It really stands out as an exotic starter. Dip the bread in the mousse and yoghurt, and enjoy! This dish is great to make as a bonus dish while smoking something else on the grill.

Bacon wrapped dates

Bacon wrapped dates

Bacon wrapped dates are quick to make, and you can cook them on the grill or in the oven. If grilling them, use direct heat. It takes approximately 10-20 minutes, depending on how hot your grill is. The combination of sweet dates and salty bacon is superb!
