Gazpacho is a really good vegetarian soup served cold. It is easy to make and is great for the summer party or as part of a buffet. Here’s a simple yet very good recipe.

Ingredients
- 2 oz white bread
- 2 shallots
- 18 oz cherry tomatoes
- 3 tbsp olive oil
- 1 garlic clove, crushed
- 1 cucumber
- 0.5 red paprika
- 1.3 cups hot water
- 1 chicken broth cube
- 2 tbsp tomato puré
- 1 tsp salt
- 0.5 tsp coarse ground black pepper
Instructions
- Peel and chop the shallots.
- Peel and chop the cucumber.
- Chop the paprika.
- Mix the hot water with a chicken broth cube and let it dissolve.
- Place the bread in the broth while it cools off for a few minutes.
- Now put all ingredients in a blender, and blend well. Serve in small bowls or glasses.
