Gazpacho

Gazpacho is a really good vegetarian soup served cold. It is easy to make and is great for the summer party or as part of a buffet. Here’s a simple yet very good recipe.

Ingredients

  • 2 oz white bread
  • 2 shallots
  • 18 oz cherry tomatoes
  • 3 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 cucumber
  • 0.5 red paprika
  • 1.3 cups hot water
  • 1 chicken broth cube
  • 2 tbsp tomato puré
  • 1 tsp salt
  • 0.5 tsp coarse ground black pepper

Instructions

  • Peel and chop the shallots.
  • Peel and chop the cucumber.
  • Chop the paprika.
  • Mix the hot water with a chicken broth cube and let it dissolve.
  • Place the bread in the broth while it cools off for a few minutes.
  • Now put all ingredients in a blender, and blend well. Serve in small bowls or glasses.
